I bought eggs for the first time in years so… eggs I guess! Maybe I’ll cube and fry up some Spam and scramble some eggs with it.
Edit: hmm I know spam is meant to be pretty resilient but most sites I’m seeing are saying try to use it within 3 years…
if the can is swelling, toss it. if it isnt but you open it up and it smells even remotely off, toss it. if not, cook thoroughly.
I’m a big fan of spam, it never last that long in my cupboard! got a jar of pickled lettuce that’s been in there for 6 years though and I dont want to eat it but I also dont want to throw it out because it’s so weird.
I had melty cheese so I made an omelette
Looks good. I haven’t made an omlette in ages, I will have to do one myself again soon.
My version for breakfast
Noice. What’s in that handsome fella?
Just a bit of cheese and onion in the egg mix, then a bit more cheese melted in the middle. Plain, simple and yummy.
Pork schnitzel, roasted fennel and salad.
Left over taco Monday on Tuesday! 🤣
That’s just taco Tuesday with extra steps!
Yeah, but pre-cog steps, so less steps on a Tuesday… Or something something sci-fi!
There’s a huge downside to cooking a big batch, night 2 is okay, but we’ve got enough for night 3 and I’m going to have to be extra creative and make a taco pie tomorrow to keep the family happy.
Taco spaghetti goes pretty well too.
I was going to do just that, however my wife turned it into a pie and it was awesome!
Grilled Salmon with a salsa and asparagus.
Little cool here today, so cooking up a hearty Corned beef meal! Roughly based on this WW recipe, but I chuck in a cup or 2 of ginger ale instead of sugar, skip the vinegar, and add mustard powder, a little cinnamon and nutmeg,.and let it rest for 20mins in the pot before serving.
Looking forward to making a Reuben sandwich with the leftovers tomorrow too! Sometimes I think I only cook this to have a Reuben lol
