As far as I know, the only “stable” linux phones are the Pinephone and Librem 5. The former runs hot and is painfully slow and the librem is very expensive for what you get. Some android phones can be reflashed but there are always core hardware features missing like camera, usb and GPS. I wrote this comment on my Oneplus 6 running postmarketOS, so you can make it work if you accept the shortcomings.
While that would be pretty nice, there are working open source drivers made by the community already. They have issues and only really work on linux though. lvra has plenty of info about this stuff.

I’ve not noticed any issues using the included dongle that comes with pixel phones. What’s annoying is that when the type-c connector is bumped, the dongle can lose signal and the music stops completely. My current phone has a headphone jack for this very reason.
